I'm not sure why you think a letter won't be any use. You'll have to send one before any legal claim anyway and the landlord has no defence. Its a complicated claim and costs several hundred pounds. You can't use the small claims court for a penalty claim, but you can use it for the £800 itself.

Through a solicitor yes, initially. If it goes to court, not unless you have a court order for some other reason. So not normally.

Personally, I'd write a letter before action, paper envelope, proper letter, pointing out that you want the deposit paid within x days, otherwise you will either take legal action or retain a solicitor on a conditional fee basis (which is what no win no fee is). You might need to use someone else address, but you should really use your own.

You don' t say how long it is since you moved out. The landlord does not have to return the deposit on the same day that you leave. I would do as advised by JPK. If it is then returned you could of course still  take action over the other issues, or you could just accept that the landlord was not looking to defraud you, they are also human and fallible. Just a thought.

The things you start with mostly why you want to pursue a claim aren't about any mistakes relating to Deposit protection. They are all to do with revenge because your feelings or sensibilities were hurt. These are your words. No-one else made you write them. In your head this is your justification.

Technically there may well be issues with the Deposit protection, as already stated, but it doesn't feel like an attempt to defraud you from the outset was part of the play here... your Deposit has been returned within a few days.

You asked what we thought? Well, I think you're an opportunist and I hope no-one here offers you further assistance.

I hope so too. If things were so bad, why did you stay for 2 years and renew 3 times?  I gather you would still be there if they had not served notice?  There is something very distasteful and ugly about the zeal with which you are pursuing someone over small oversights. The fact that you seem to feel you are fully justified tells me you have a very grasping mindset. A nice person would let this go. You won' t.
