Do I need to use official documentation if tenant at end of periodic tenancy?

Can I just send letter to say I will not be renewing their tenancy.  They were on a 3 year AST and then went on to a periodic, and I would like them to leave at the end of 1 year (on periodic).  I know I need to give them 2 months notice.

You'll need to issue a Section 21 notice. See https://www.gov.uk/guidance/gaining-possession-of-a-privately-rented-property-let-on-an-assured-shorthold-tenancy

(Well, in theory I suppose you could just ask them to leave, and they might leave anyway ... or they might not. They're under no obligation to do so unless you do it properly by issuing a valid Section 21.)

If you are on good relations with the outgoing Tenants then you could get away with it - but, even if you were on good relations with them, why would you ever contemplate just sending a letter? Writing a letter and writing a Section 21 isn't going to be that much different in the amount of effort required, right? Consider the Section 21 your letter instead.
