Sub-landord does not return the full deposit back

With my flatmate we agreed that I will move out on the 28/12/2019 but because she could could not find a flatmate yet she told me that I have to stay at least until the mid-January otherwise I won't get back fully my deposit.

However, just to clarify that she is not the actual landlord of the flat but she rents the flat from the landlord, lives in one of the 2 rooms of it and rents out the second room to me.

So what specifically applies in this case?

There was no written contract signed between us for the flat (which also mentions notice periods).

But there was a verbal agreement 3 weeks ago that my move out date will be in 28/12 but because she has not found another flatmate she now "threatens" me that I have to stay here until mid-January (basically until she finds a new flatmate - otherwise obviously she would have to pay the rent of the whole flat by herself until she finds the new flatmate) otherwise I won't get my deposit fully back.

If you have no contract or written agreements then your rights are minimal.  Your deposit is not protected through a scheme and have no tenancy agreement (AST).  I assume you don't have a lodger's agreement.

Just need to discuss terms with your ex-flatmate.  Your best shot is coming to an agreement mutually.
