Our tenants gave us plenty of notice (over two months) to leave our property once the contract ends on 1 February, but they're happy to stay a further month which also suits us. Do we have to get another contract for this month only? Also, does a Section 21 need to be done, even though they have ended the tenancy? We want to ensure we have everything in place once the contract ends.

No,a periodic tenancy can run for as long as you wish,with no loss of legal rights for either side.You would only need Section 21 if they refused to go when agreed.
