Tenant has done runner owing £5k in back-rent

I have a 4 bed rental property in London and let the rooms individually to 4 separate people. They signed an AST with the clause around joint and several liability removed.  I have never enforced this clause as it just feels unfair and have never suffered any real problems as a result.  This tenant was an early 20s female working full time and provided a reference.  Her Dad even called prior to her moving in to check I sounded like a "proper" landlord who would not be some kind rogue landlord where his precious daughter was concerned.  The first 6 months were fine rent paid on time and in full and then problems started with short payments and some missing altogether.  I spoke to her about this many times and started documenting it in emails and texts between us and eventually agreed a payment plan with her.  She even reassured me that "Daddy would pay" if she couldn't get herself straight.  I'm pretty sure even now that there was no malicious intent but she clearly got out of her depth and did a runner.. IE vacated the property one day and disappeared.  Her Father called me and asked how much was owed and since I told him I haven't heard anything from him (No sh*t sherlock).  I have no forwarding address but do have some letters addressed to her from HMRC which from the look of the envelope contain tax codes etc and therefore may contain employer info.  She moved jobs after 6 months of moving in which was where her problems started (according to her IE short shifts, not enough hours etc).
I have clearly made a number of mistakes here but most from trying to help and be supportive.  I still have her deposit she has ignored all communication since (needless to say) as has her Father whom I have an email address for.
Does anyone have any advice as to the best way to pursue the cash?  I at least want her to get a CCJ (despite lack of malicious intent) for my trouble and loss but not sure what I can do with no forwarding address.

You can serve proceedings on last known address, or apply to court for alternative means of service. The last known address would be the rented property.
