Amending/replacing joint tenancy

Hi all, I'm a landlord with two tenants in a joint AST. The fixed term expired earlier this year and it has rolled into a periodic tenancy, which suits all of us. One tenant now wants to move out and the other to stay.

The question is: is there any way of just amending the current AST to bear the name of only the remaining tenant?

Or do we need to go through a rigmarole of ending the tenancy, presumably doing an inspection and returning the deposit, then signing a new AST (with a very short duration of a month or two), doing another inspection and taking a new deposit and then letting the new contract roll into a periodic tenancy?

Seems like a lot of hassle. The other option is to just let the tenancy run on the grounds that the tenant who has moved out has the right to end it with a month's notice if anything goes wrong in any case, but I don't know if they want to do that.
